Program auto updating without permission? need to disable this

Got a program I use for turning a controller into a hot-key hand-held for art, Antimicrox (rebinds controller to keyboard input). It recently had an update that broke the program for everyone (3.5.1). I have used Flatpak’s updater to jump back to last stable update (3.5.0). After restarting however the program returns back to 3.5.1.

As far as I understand Flatpak is not responsible for the auto update. Bazaar even shows when a go back down to 3.5.0 and reflects this. How does it keep jumping back on reboot and how do I stop this?
