The experience is fantastic. However I miss those automatic updates, ig I will just add ublue-update later on.

System & Flatpak updates are still automatic through systemd services, even without ublue-update, see:
systemctl status rpm-ostreed-automatic.timer
systemctl status flatpak-system-update.timer
systemctl --user status flatpak-user-update.timer
Also, take a look at the second line of rpm-ostree status

What is the advantage to this vs the system already in place?
I am not sure, but ig it provides that ublue manual updater application(which uses toupgrade)
