I was able to do this with a utility called “input remapper” which is actually pre-installed in Bluefin!
Below is a screenshot of the mapping configuration:
Unfortunately I spoke too soon. This does not seem to work everywhere.
It is working isnide a Ptyxis terminal, as shown here where I interrupt a sleep command using “Copilot-C”:

^C
real 0m1.604s
user 0m0.001s
sys 0m0.001s
But in GUI apps like for example in this Firefox text field where I am typing this, I am unable to copy paste using (Copilot-C / Copilot-V).
So still investigating…
How about manually remapping Copilot + C and Copilot + V to Ctrl + C and Ctrl + V as well? It’s jank, but could work for combinations that you often use.
